The opportunity to work alongside Matthew Barrett was too good to turn down. I learnt so much from the ex-Ritz chef and working in a much slower paced role helped me develop a much better understanding of how to organise and run a kitchen. We were a very small team and teamwork was and still is the only way to go for me. I was offered the opportunity at the age of 29 (2004) to take the role of head chef. For me this was when I really started to develop my own style of food. Irish Ferries used to operate a ferry service from Roscoff to Rosslare from May to September but now sail to Cherbourg instead. After 9 years at the top winning Cheshire restaurant of the year , Chef of the Year and appearing on GBM amongst many highlights including cooking for many celebrities and famous people I decided to move on into development with Sousvidetools. From 1522 to 1545–1550 the construction the Church of Our Lady of Kroas Batz (see Monuments above).

The trade may have begun in 1828 when the first successful trip is said to have been made by Henri Ollivier. From the area around Roscoff in Brittany known as Bro Rosko Johnnies found a more profitable market in Britain than in France and typically took their harvest across the English Channel in July to store in rented barns, returning home in December or January. They could have sold their produce in Paris but the roads and the railways were bad in the 19th century and going there was a long and difficult trip; crossing the Channel was shorter and easier. Technology is now widely used in the industry and I am super proud to say we have been a big part of spreading that message. The main inspiration for this was to train and educate people . I always had a great passion for education but could never really see myself at a college . The industry which I love is really struggling to bring through new recruits and if I can help that process I will be immensely proud. Turn the heat down to a low setting and whisk in the butter one piece at a time, allowing each piece to melt and homogenize before adding the next (it is also a good idea to occasionally take the pan off the heat, then returning it when it is becoming too cool.The nearby Île de Batz, called Enez Vaz in Breton, is a small island that can be reached by launch from the harbour. The food seen in the Uk has improved dramatically over the last ten years and I feel this will continue with the correct education. Once cool place the onions into a vacuum pouch, in the same pan add the beef dripping, chopped thyme, garlic powder and 1 tsp of Maldon sea salt.
